HOT CHOCOLATE MIX¶

Note: Original recipe calls for 227g 100% cacao chocolate + 200g sugar. This version uses 80% chocolate (which contains 20% sugar \= 45g), so sugar is reduced to 155g to maintain the same total sweetness. Based on the initial batch - not so sweet. I’d up the sugar to 180g

- 100g holandské kakao (Dutch-process cocoa powder)
- 165g cukr (sugar)
- 16g kukuřičný škrob (cornstarch)
- 3g stolní sůl (table salt) - about ¼ teaspoon
INSTRUCTIONS¶
- Freeze the chocolate: Place the 270g hořká čokoláda (dark chocolate) in the freezer until completely frozen, about 15 minutes.
- Process the mix: Remove chocolate from freezer, break into rough pieces, and place in food processor along with 100g holandské kakao (Dutch-process cocoa powder), 165g cukr (sugar), 16g kukuřičný škrob (cornstarch), and 3g stolní sůl (table salt - about ¼ teaspoon). Process until completely powdered, about 1 minute.
- Store: Transfer to an airtight container (you'll need about 500-600ml capacity) and store in cool, dark place for up to 3 months.
- To make hot chocolate: Add 8-16g (1 to 2 tablespoons) of the mixture, or more if desired, to 240ml (1 cup) boiling milk and stir or whisk until combined. To thicken it further, return the pan to the heat and simmer for 30 seconds, until thick and smooth.
