STRAWBERRY MUFFINS¶

- 2 cups + 2 teaspoons all-purpose flour (hladká mouka), divided (250g + 6g)
- 2 teaspoons baking powder (prášek do pečiva) (8g)
- ¾ teaspoon salt (4g)
- 1 stick (½ cup) unsalted butter, softened (113g)
- 1 cup granulated sugar (200g)
- 2 large eggs
- 1½ teaspoons vanilla extract (vanilkový extrakt) (7ml)
- ¼ teaspoon almond extract (mandlový extrakt) (1ml)
- ½ cup milk (120ml)
- 2¼ cups diced strawberries, from 1 pint (\~350g whole berries) (340g diced)
- 2 tablespoons demerara sugar (třtinový cukr), for topping (25g)
INSTRUCTIONS¶
- Preheat oven to 375°F (190°C). Line 12-cup muffin tin with paper liners and spray liners with non-stick cooking spray. Alternative: grease muffin tin well with butter if no liners/spray available.
- Combine 2 cups all-purpose flour (hladká mouka) (250g), baking powder (prášek do pečiva) (8g), and salt (4g) in mixing bowl. Whisk well and set aside.
- In small bowl, toss diced strawberries (340g) with remaining 2 teaspoons flour (hladká mouka) (6g) to coat lightly. Set aside ½ cup of coated strawberries (85g) for topping.
- In large bowl, beat softened butter (113g) and granulated sugar (200g) for few minutes until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Beat in vanilla extract (vanilkový extrakt) (7ml) and almond extract (mandlový extrakt) (1ml).
- Gradually add flour mixture in three additions, alternating with milk (120ml), ending with flour. This prevents overmixing.
- Add remaining strawberries to batter and gently fold with rubber spatula. Don't overmix—just few turns.
- Spoon batter into prepared muffin tin. Top with reserved berries (85g) and demerara sugar (třtinový cukr) (25g).
- Bake 30 minutes until golden and tester comes out clean. Cool in pan 25 minutes, then transfer to rack.
